Ingredients

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup honey
  • 2 tbsp dried culinary lavender
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with colorful liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a mixing bowl.
  3. Cream the softened butter and sugar together until light and fluffy.
  4. Add eggs one by one, beating well after each addition, then mix in honey, dried lavender, and vanilla extract.
  5. Gradually introduce the dry ingredients to the wet mixture, alternating with buttermilk.
  6. Pour the batter into prepared cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, checking for doneness with a toothpick.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack.

Notes

These cupcakes can be made a day ahead and stored in an airtight container. For a more intense lavender flavor, infuse your buttermilk with lavender.
