- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup honey
- 2 tbsp dried culinary lavender
- 1 tsp vanilla extract
- 1/2 cup buttermilk
Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake pan with colorful liners.
- Whisk together the flour, baking powder, baking soda, and salt in a mixing bowl.
- Cream the softened butter and sugar together until light and fluffy.
- Add eggs one by one, beating well after each addition, then mix in honey, dried lavender, and vanilla extract.
- Gradually introduce the dry ingredients to the wet mixture, alternating with buttermilk.
- Pour the batter into prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, checking for doneness with a toothpick.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack.
Notes
These cupcakes can be made a day ahead and stored in an airtight container. For a more intense lavender flavor, infuse your buttermilk with lavender.
