Description

Ingredients

  • 4 chicken thighs
  • 2 peaches, diced
  • 1 jalapeno pepper, finely chopped
  • 1/2 cup peach preserves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Season the chicken thighs with salt, pepper, garlic powder, and onion powder.
  2. Heat the olive oil in a heavy-bottomed skillet over medium heat until shimmering.
  3. Brown the chicken thighs for about 5-7 minutes per side until they develop a golden brown crust.
  4. Set aside the chicken on a plate to rest.
  5. Sauté the diced peaches and jalapeño in the same skillet for about 2-3 minutes.
  6. Add the peach preserves and cook until bubbling and thickened.
  7. Combine the chicken back in the skillet, coating it in the peach glaze and heating through for an additional 2-3 minutes.
  8. Serve hot, optionally garnished with extra peach slices.

Notes

For a milder flavor, remove jalapeño seeds or substitute with a poblano pepper. Store leftovers in an airtight container for up to 3 days.
