- 2 peaches, diced
- 1 jalapeno pepper, finely chopped
- 1/2 cup peach preserves
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Season the chicken thighs with salt, pepper, garlic powder, and onion powder.
- Heat the olive oil in a heavy-bottomed skillet over medium heat until shimmering.
- Brown the chicken thighs for about 5-7 minutes per side until they develop a golden brown crust.
- Set aside the chicken on a plate to rest.
- Sauté the diced peaches and jalapeño in the same skillet for about 2-3 minutes.
- Add the peach preserves and cook until bubbling and thickened.
- Combine the chicken back in the skillet, coating it in the peach glaze and heating through for an additional 2-3 minutes.
- Serve hot, optionally garnished with extra peach slices.
Notes
For a milder flavor, remove jalapeño seeds or substitute with a poblano pepper. Store leftovers in an airtight container for up to 3 days.
