Ingredients

- 1 cup pastina (tiny pasta)
- 4 cups chicken broth
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat a little oil over medium heat and sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for another minute until fragrant.
- Pour in the chicken broth and add the thyme and bay leaf. Bring to a boil.
- Add the pastina and cook according to package instructions until al dente.
- Season with salt and pepper to taste.
- Remove the bay leaf and serve hot, garnished with fresh parsley.
