- 1 lb sirloin steak, cut into bite-sized pieces
- 2 cups baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large pot, boil the halved baby potatoes until fork-tender, about 10-15 minutes.
- Drain the potatoes and toss them with 2 tablespoons of butter, salt, and pepper.
- Spread the potatoes on a baking sheet and roast in the oven for 20-25 minutes until golden and crispy.
- In a skillet over medium-high heat, melt the remaining 2 tablespoons of butter.
- Add the steak bites to the skillet and season with salt, pepper, and thyme.
- Cook the steak bites for 3-4 minutes until browned and cooked to your desired doneness.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Serve the steak bites with the roasted potatoes and garnish with fresh parsley.
