Indulgent Queso Chicken Enchiladas are a creamy, cheesy delight that combines tender chicken with a rich queso sauce, all wrapped in soft tortillas and baked to perfection.

- 2 cups cooked shredded chicken
- 1 cup queso cheese sauce
- 8 flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, onions, bell peppers, garlic powder, cumin, salt, and pepper.
- Spread a layer of queso cheese sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture and roll them up tightly.
- Place the rolled tortillas seam-side down in the baking dish.
- Pour the remaining queso cheese sauce over the top of the enchiladas.
- Sprinkle shredded cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
- For a spicier version, add jalapeños to the filling.
- These enchiladas can be made ahead of time and stored in the refrigerator before baking.
- Serve with sour cream and fresh cilantro for added flavor.
