Description

Indulgent Queso Chicken Enchiladas are a creamy, cheesy delight that combines tender chicken with a rich queso sauce, all wrapped in soft tortillas and baked to perfection.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup queso cheese sauce
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, onions, bell peppers, garlic powder, cumin, salt, and pepper.
  3. Spread a layer of queso cheese sauce on the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture and roll them up tightly.
  5. Place the rolled tortillas seam-side down in the baking dish.
  6. Pour the remaining queso cheese sauce over the top of the enchiladas.
  7. Sprinkle shredded cheese on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

  • For a spicier version, add jalapeños to the filling.
  • These enchiladas can be made ahead of time and stored in the refrigerator before baking.
  • Serve with sour cream and fresh cilantro for added flavor.
