  • ½ cup pizza sauce
  • 4 oz shredded low-moisture mozzarella cheese
  • 1 oz sliced pepperoni
  • 1 teaspoon grated Parmesan cheese
  • Pinch of sea salt
  • 3 oz whole milk ricotta cheese
  • ½1 teaspoon hot honey
  • 23 fresh basil leaves, finely chopped

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until foamy and fragrant.
  2. Prepare the dough: In a large mixing bowl, whisk together the bread flour and salt. Make a well in the center, then pour in the foamy yeast mixture along with olive oil. Mix until a shaggy dough forms.
  3. Knead the dough: Transfer the dough onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic.
  4. Let it rise: Place the kneaded dough in a bowl coated with olive oil, cover with a damp towel, and allow it to rise for about 1 hour, until doubled in size.
  5. Preheat the oven: Preheat the oven to 475°F about 30 minutes before the dough rises.
  6. Shape the dough: Once risen, punch it down and roll it out to about 12 inches in diameter.
  7. Add the toppings: Transfer the rolled dough to a pizza pan, spread pizza sauce, sprinkle mozzarella cheese, and layer with pepperoni.
  8. Dollop the ricotta: Place small dollops of ricotta evenly across the pizza, sprinkle with Parmesan and a pinch of sea salt.
  9. Bake: Slide into the oven and bake for 12-15 minutes until golden brown.
  10. Finish with hot honey: Drizzle hot honey over the pizza before serving. Top with fresh basil and let sit for 2-3 minutes before slicing.

Notes
