  • 4 brioche buns
  • 4 tablespoons mayonnaise

  • 2 teaspoons chipotle in adobo (finely chopped)
  • 1 cup shredded lettuce
  • 8 dill pickle slices

Instructions

  1. Marinate the chicken: In a large bowl, combine the buttermilk, hot sauce, garlic powder, and smoked paprika. Immerse the chicken thighs in the mixture, ensuring they are fully coated. Allow them to marinate for at least one hour in the refrigerator—overnight is even better for maximum flavor.
  2. Prepare the coating: In a separate bowl, mix the all-purpose flour, salt, black pepper, onion powder, and cayenne pepper to create your seasoned flour mixture.
  3. Heat the oil: Pour a generous amount of vegetable oil into your cast iron skillet or deep fryer. Heat it to 350°F (175°C). Ensure there is enough oil for the chicken to be completely submerged or partially fried for that perfect crunch.
  4. Dredge the chicken: Remove the chicken thighs from the marinade, letting any excess liquid drip off. Coat each thigh thoroughly in the seasoned flour mixture, pressing down to adhere the flour to the chicken.
  5. Fry the chicken: Carefully place the breaded chicken thighs into the hot oil. Fry for 6 to 8 minutes, turning once, until they achieve a golden-brown crust. Use a meat thermometer to check that the chicken reaches an internal temperature of 165°F (74°C). Remove the chicken from the oil and allow it to drain on a paper towel-lined plate.
  6. Create the chipotle honey mayo: In a small bowl, mix the mayonnaise, honey, and finely chopped chipotle in adobo until smooth and well combined.
  7. Toast the buns: Optionally, lightly toast the brioche buns to enhance their texture.
  8. Assemble the sandwich: On the bottom half of each bun, spread a generous layer of the chipotle honey mayo. Layer on a hot, crispy chicken thigh, followed by a handful of shredded lettuce and dill pickle slices. Top it off with the other bun halves, and serve immediately while hot and crispy.

Notes

For a lighter version, consider using an air fryer. Mix the sauce ahead of time for added convenience. Skipping the marinating step will result in less flavorful chicken.
