Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Combine in a large mixing bowl, 2 cups of flour, 1 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt until well blended.
  3. Mix in another bowl, whisk together 1/2 cup of melted butter, 1 cup of milk, 2 large eggs, and 1 teaspoon of vanilla extract until smooth.
  4. Combine the wet mixture into the dry ingredients. Stir gently until just combined.
  5. Fold in 1 cup of cranberries and 1 cup of chopped pistachios, ensuring they are evenly distributed.
  6. Pour the batter into the prepared loaf pan, smoothing the top for an even bake.
  7. Bake in the oven for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Cool the bread in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
