Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Combine in a large mixing bowl, 2 cups of flour, 1 cup of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt until well blended.
- Mix in another bowl, whisk together 1/2 cup of melted butter, 1 cup of milk, 2 large eggs, and 1 teaspoon of vanilla extract until smooth.
- Combine the wet mixture into the dry ingredients. Stir gently until just combined.
- Fold in 1 cup of cranberries and 1 cup of chopped pistachios, ensuring they are evenly distributed.
- Pour the batter into the prepared loaf pan, smoothing the top for an even bake.
- Bake in the oven for 50-60 minutes or until a toothpick inserted comes out clean.
- Cool the bread in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
