- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon hibiscus powder
- 1 cup granulated sugar
- 3 large eggs

- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- Mix the dry ingredients: combine flour, powdered sugar, and hibiscus powder in a bowl.
- Press the crumbly mixture into the bottom of the prepared pan.
- Bake the crust for 15 minutes, until lightly golden brown.
- Prepare the filling: whisk together granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
- Pour the lemon mixture over the warm crust and return it to the oven. Bake for 20-25 minutes until the filling is set but still jiggles slightly.
- Cool completely at room temperature, then dust with powdered sugar before slicing.
