Description

Delicate and vibrant, these Hibiscus Lemon Bars combine tangy lemon with floral notes of hibiscus, creating a refreshing dessert that’s perfect for any occasion.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon hibiscus powder
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. Mix the dry ingredients: combine flour, powdered sugar, and hibiscus powder in a bowl.
  3. Press the crumbly mixture into the bottom of the prepared pan.
  4. Bake the crust for 15 minutes, until lightly golden brown.
  5. Prepare the filling: whisk together granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
  6. Pour the lemon mixture over the warm crust and return it to the oven. Bake for 20-25 minutes until the filling is set but still jiggles slightly.
  7. Cool completely at room temperature, then dust with powdered sugar before slicing.
  8. Serve and enjoy!

Notes

These bars taste even better when chilled overnight, allowing the flavors to meld.
