  • 4 Large Bell Peppers
  • 1 lb Ground Meat (beef, turkey, or chicken)
  • 1 Cup Diced Onions
  • 1 Cup Diced Tomatoes
  • 1 Cup Corn (optional)
  • 1 Cup Black Beans (optional)
  • 1 Packet Taco Seasoning
  • 1 Cup Shredded Cheese
  • Sour Cream and Avocado for Topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the peppers by cutting the tops off and removing the seeds.
  3. Cook the ground meat with diced onions in a skillet over medium heat until browned.
  4. Add the diced tomatoes, corn, black beans, and taco seasoning; mix well and let the scents envelop you.
  5. Stuff the hearty filling into each pepper, packing it closely, and top each with shredded cheese.
  6. Bake in a baking dish with a splash of water at the bottom for 25-30 minutes covered with foil.
  7. Unveil the cheese by removing the foil and baking for an additional 10 minutes until golden.
  8. Serve with a dollop of sour cream and avocado slices.

Notes

To save time, prepare the filling in advance and stuff the peppers right before baking. For a twist, use an air fryer.
