- 1 Cup Diced Onions
- 1 Cup Diced Tomatoes
- 1 Cup Corn (optional)
- 1 Cup Black Beans (optional)
- 1 Packet Taco Seasoning
- 1 Cup Shredded Cheese
- Sour Cream and Avocado for Topping
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the peppers by cutting the tops off and removing the seeds.
- Cook the ground meat with diced onions in a skillet over medium heat until browned.
- Add the diced tomatoes, corn, black beans, and taco seasoning; mix well and let the scents envelop you.
- Stuff the hearty filling into each pepper, packing it closely, and top each with shredded cheese.
- Bake in a baking dish with a splash of water at the bottom for 25-30 minutes covered with foil.
- Unveil the cheese by removing the foil and baking for an additional 10 minutes until golden.
- Serve with a dollop of sour cream and avocado slices.
Notes
To save time, prepare the filling in advance and stuff the peppers right before baking. For a twist, use an air fryer.
