Description

A tropical delight combining guava and fluffy cake with a creamy frosting, perfect for any occasion.


Ingredients

  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Guava Juice
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 2 1/2 cups Guava Nectar or Guava Juice (for the glaze)
  • 1/2 cup Granulated Sugar (for glaze)
  • 2 tbsp Cornstarch
  • 1/4 cup Water (for slurry)
  • 8 oz Cool Whip (thawed)
  • 1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the strawberry cake mix and guava nectar in a mixing bowl and blend until smooth.
  3. Add the eggs, melted coconut oil, and vanilla extract, mixing until fully incorporated.
  4. Pour the mixture into a greased 9×13-inch baking dish.
  5. Bake for approximately 25–30 minutes, or until a toothpick comes out clean.
  6. Cool the cake in the dish for 10 minutes before transferring to a wire rack.
  7. Mix 2 1/2 cups guava nectar and 1/2 cup sugar in a saucepan and bring to a gentle simmer.
  8. Create a slurry with cornstarch and water; add to the simmering mixture until thickened.
  9. Spread Cool Whip over the cooled cake, and drizzle with guava glaze.
  10. Sprinkle sweetened coconut flakes on top for garnish.

Notes

For a less sweet cake, reduce sugar in the batter and the glaze. You can also use fresh guava instead of guava nectar.
