Description

Crispy roasted baby potatoes topped with creamy feta cheese and infused with garlic and oregano, offering a taste of Greece in every bite.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, toss the potatoes with olive oil, garlic powder, oregano, salt, and pepper.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25 to 30 minutes, tossing halfway through.
  6. Remove from the oven and sprinkle crumbled feta cheese on top.
  7. Return to the oven and roast for an additional 5 to 7 minutes.
  8. Garnish with fresh parsley before serving.
