- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup feta cheese, crumbled
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, toss the potatoes with olive oil, garlic powder, oregano, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25 to 30 minutes, tossing halfway through.
- Remove from the oven and sprinkle crumbled feta cheese on top.
- Return to the oven and roast for an additional 5 to 7 minutes.
- Garnish with fresh parsley before serving.
