Ingredients

- 2 chicken breasts
- 1 cup cooked quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Cook the quinoa according to package instructions and set aside to cool.
- Make the dressing by whisking together olive oil, lemon juice, oregano, salt, and pepper.
- Season the chicken breasts with salt and pepper, then grill or pan-cook for 5-7 minutes per side.
- Combine the cooked quinoa, cucumber, tomatoes, red onion, feta, and olives in a large bowl.
- Add the sliced chicken and drizzle with the dressing.
