A comforting dish of gnocchi tossed in a creamy carbonara sauce with crispy bacon, Parmesan cheese, and garlic.

- 1 pound Potato Gnocchi (homemade or store-bought)
- 6 ounces Bacon
- 2 Eggs
- 1 cup Parmesan Cheese (finely grated)
- 2 cloves Garlic (minced)
- 2 tablespoons Chopped Fresh Parsley
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 tablespoons Olive Oil
Instructions
- Bring a large pot of salted water to a rolling boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Use a slotted spoon to remove them, reserving about 1 cup of the cooking water.
- In a large skillet over medium heat, add the bacon. Cook, stirring occasionally, until golden brown and crispy, approximately 5-7 minutes. Remove excess grease, leaving about 1 tablespoon.
- Add the minced garlic to the skillet with the bacon remnants and sauté for about 30 seconds until fragrant.
- Turn off the heat and immediately add the cooked gnocchi to the skillet, tossing to coat in the bacon and garlic oil.
- In a mixing bowl, whisk together the eggs, Parmesan cheese, salt, and pepper until smooth.
- Add the reserved starchy pasta water to the egg mixture gradually, whisking constantly to prevent scrambling.
- Pour the egg mixture over the gnocchi in the skillet and toss continuously until well-coated and a creamy sauce forms.
- Stir in the chopped parsley, season to taste, and serve immediately, garnished with extra Parmesan and a crack of black pepper.
Notes
For a vegetarian version, replace bacon with sautéed mushrooms or smoked tempeh. For a gluten-free option, use gluten-free gnocchi.
