- 2 pounds baby potatoes
- 6 strips bacon
- 1 onion, diced
- 1 shallot, diced
- 1/4 cup fresh chives, chopped
- 1/4 cup apple cider vinegar
- 2 tablespoons mustard
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Cook the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and cool them.
- Crisp the bacon in a skillet, then crumble it.
- Sauté onions and shallots in the bacon fat until softened.
- Mix the dressing ingredients in a bowl and adjust seasoning.
- Combine cooled potatoes, bacon, sautéed onions, and chives.
- Dress the salad and toss gently.
- Serve warm or at room temperature.
