Description

A warm and inviting German potato salad featuring baby potatoes, crispy bacon, fresh herbs, and a tangy homemade dressing.


Ingredients

  • 2 pounds baby potatoes
  • 6 strips bacon
  • 1 onion, diced
  • 1 shallot, diced
  • 1/4 cup fresh chives, chopped
  • 1/4 cup apple cider vinegar
  • 2 tablespoons mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the potatoes in salted water until tender, about 15-20 minutes.
  2. Drain the potatoes and cool them.
  3. Crisp the bacon in a skillet, then crumble it.
  4. Sauté onions and shallots in the bacon fat until softened.
  5. Mix the dressing ingredients in a bowl and adjust seasoning.
  6. Combine cooled potatoes, bacon, sautéed onions, and chives.
  7. Dress the salad and toss gently.
  8. Serve warm or at room temperature.
