  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon hoisin sauce
  • 12 teaspoons red pepper flakes
  • Green onions, sliced for garnish

Instructions

  1. Prepare the chicken: In a bowl, coat the cubed chicken in cornstarch, ensuring every piece is well covered. Dip the coated chicken into the beaten eggs, allowing excess egg to drip off.
  2. Fry the chicken: In a large skillet, heat the vegetable oil over medium heat until shimmering. Fry the chicken pieces in batches until golden brown and cooked through, around 5-7 minutes. Transfer the golden chicken to a plate lined with paper towels, letting them rest.
  3. Aromatics in action: In the same skillet, lower the heat slightly and add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  4. Mix the sauce: In a separate bowl, whisk together the soy sauce, rice vinegar, sugar, sesame oil, hoisin sauce, and red pepper flakes until combined. Pour this mixture into the skillet, bringing it to a gentle simmer.
  5. Reunite the chicken and sauce: Return the crispy chicken to the skillet, tossing to coat each piece generously in the sauce. Let it bubble for an additional 2-3 minutes until everything is nicely heated through.
  6. Final touches: Garnish with sliced green onions and serve immediately.
