Ingredients

  • 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 lb baby potatoes, halved
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.
  3. While the potatoes are roasting, heat 2 tablespoons of butter in a skillet over medium-high heat.
  4. Add the steak bites to the skillet and season with salt and pepper. Cook for 3-4 minutes until browned and cooked to your desired doneness.
  5. Add the minced garlic, rosemary, and thyme to the skillet, and cook for an additional 1-2 minutes until fragrant.
  6. Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted and combined.
  7. Serve the garlic butter steak bites alongside the roasted potatoes.
