  • 1.5 lbs fresh Atlantic cod fillets (or other thick, white fish like haddock or halibut), skinless, cut into 1.5-inch cubes

  • ¾ teaspoon kosher salt, divided

  • ½ teaspoon freshly ground black pepper, divided

  • ½ teaspoon smoked paprika or sweet paprika

  • ¼ cup all-purpose flour (or gluten-free 1:1 flour)

  • 4 tablespoons (½ stick / 56g) unsalted butter

  • 2 tablespoons olive oil or avocado oil

  • 68 large cloves garlic, minced or finely sliced (about 2 tbsp)

  • 2 tablespoons fresh lemon juice (from about 1 lemon)

  • 1 tablespoon chopped fresh parsley

  • Lemon wedges, for serving

For the Creamy Lemon Herb Dip:

  • ½ cup (120g) full-fat sour cream

  • ¼ cup (60g) mayonnaise (Kewpie mayo recommended for extra umami)

  • 1 tablespoon fresh lemon juice, plus 1 teaspoon finely grated lemon zest

  • 1 small garlic clove, grated or minced to a paste

  • 2 tablespoons finely chopped fresh herbs (a mix of dill, chives, and parsley is ideal)

  • 1 teaspoon Dijon mustard

  • ¼ teaspoon kosher salt, or to taste

  • ¼ teaspoon freshly ground black pepper

  • 12 tablespoons milk or buttermilk, to thin if needed

For Garnish & Serving:

  • Fresh dill fronds or parsley

  • Extra lemon wedges

  • Flaky sea salt (like Maldon)


Instructions

Step 1: Prepare the Cod and Make the Dip
Pat the cod cubes thoroughly dry with paper towels. This is crucial for a good sear. In a small bowl, mix ½ tsp salt, ¼ tsp black pepper, and the paprika. Sprinkle evenly over the fish, tossing gently to coat. Place the flour in a shallow dish. Prepare the dip: In a medium bowl, whisk together all dip ingredients—sour cream, mayo, lemon juice & zest, grated garlic, herbs, Dijon, salt, and pepper—until smooth. Cover and refrigerate to let flavors meld.

Step 2: Lightly Dredge the Cod
Working in batches, lightly dredge the seasoned cod cubes in the flour, shaking off any excess. The flour coating will help create a delicate, golden crust. Place on a plate in a single layer.

Step 3: Sear the First Batch of Cod
In a large non-stick or cast-iron skillet, heat 1 tablespoon of the oil and 1 tablespoon of the butter over medium-high heat until the butter is melted and foaming. Add half the cod cubes in a single layer, ensuring they are not touching. Cook undisturbed for 2 minutes, then flip carefully with tongs. Cook for another 1.5 to 2 minutes, until the fish is opaque, flakes easily with a fork, and has a golden crust. Transfer to a clean plate and tent loosely with foil.

Step 4: Sear the Second Batch & Start the Sauce
Add the remaining 1 tablespoon of oil and 1 tablespoon of butter to the skillet. Repeat the searing process with the remaining cod cubes. Transfer to the plate with the first batch. Reduce heat to medium-low.

Step 5: Create the Garlic Butter Pan Sauce
Add the remaining 2 tablespoons of butter to the now-empty skillet. Once melted, add the minced garlic. Cook, stirring constantly, for 45-60 seconds until fragrant and just beginning to turn golden—do not let it burn. Immediately remove the skillet from the heat to stop the cooking. Carefully pour in the lemon juice (it may sputter). Swirl the pan to combine.

Step 6: Finish and Coat the Fish
Return all the cooked cod bites and any accumulated juices to the skillet. Gently toss and roll the cod in the garlic butter sauce to coat every piece. Sprinkle with the fresh parsley and give one final gentle toss.

Step 7: Garnish and Serve Immediately
Transfer the garlic butter cod bites to a serving platter. Drizzle any remaining sauce from the pan over the top. Garnish with a sprinkle of flaky sea salt, extra fresh herbs, and lemon wedges. Serve immediately with the chilled Creamy Lemon Herb Dip on the side for dipping
