Ingredients

  • 1 lb ground beef
  • 1 can of diced tomatoes
  • 1 can of kidney beans, drained
  • 1 packet of taco seasoning
  • 2 cups of shredded cheese
  • 2 cups of Fritos corn chips
  • 1/2 cup of chopped onions
  • 1/2 cup of bell peppers, chopped

Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add the chopped onions and bell peppers, cooking until softened.
  3. Stir in the diced tomatoes, kidney beans, and taco seasoning.
  4. Add the chopped cabbage and cook until the cabbage is tender.
  5. Remove from heat and stir in 1 cup of shredded cheese.
  6. Transfer the mixture to a baking dish and top with remaining cheese and Fritos.
  7. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until the cheese is melted and bubbly.
