Description

A comforting dish featuring tender chicken thighs simmered in a creamy mushroom sauce, perfect for busy weeknight dinners.

Ingredients

Scale
  • 4 pieces Chicken Thighs (Bone-in, skin-on)
  • 2 tablespoons Olive Oil
  • To taste Salt and Pepper
  • 1 can Cream of Mushroom Soup
  • 1 packet Onion Soup Mix
  • 1 cup Water
  • 1 tablespoon Fresh Parsley (for garnish)

Instructions

  1. Bring the chicken thighs to room temperature and season generously with salt and pepper.
  2. Heat the olive oil in a heavy skillet or Dutch oven over medium-high heat. Sear the chicken thighs skin-side down until golden brown, about 5-7 minutes. Flip and sear the other side until just browned.
  3. In a separate bowl, whisk together the cream of mushroom soup, onion soup mix, and water.
  4. Pour the soup mixture over the seared chicken in the skillet, ensuring it envelops the pieces. Bring to a gentle simmer.
  5. Cover the skillet with a lid and reduce the heat to low. Cook undisturbed for about 30-40 minutes.
  6. Once cooked, garnish with fresh parsley before serving.

Notes

Serve with fluffy rice, creamy mashed potatoes, or crusty bread to soak up the sauce. This dish can be made ahead of time and reheats well.
