- 2 cups grated hash browns
- 2 tablespoons melted butter
- 4 large eggs
- 1/2 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the grated hash browns with melted butter, salt, and pepper.
- Press the hash brown mixture into the bottom and sides of a greased muffin tin to form baskets.
- Bake the hash brown baskets for 20 minutes or until golden brown and crispy.
- Remove from the oven and crack an egg into each basket.
- Sprinkle cheese on top of the eggs.
- Return to the oven and bake for an additional 10-12 minutes, or until the eggs are set to your liking.
- Garnish with chopped green onions before serving.
Notes
