  • 1/2 cup mayonnaise or vegan mayonnaise
  • 2 tbsp ketchup
  • 1/2 tbsp rice vinegar
  • 2 tbsp sweet relish
  • 1 tbsp sugar for dipping sauce

Instructions

  1. Slice the zucchini into uniform rounds, about 1/4-inch thick.
  2. Prepare the batter in a mixing bowl by combining flour, water, salt, pepper, cumin, paprika, chili powder, sugar, and garlic powder.
  3. Coat the zucchini slices in the batter and let excess drip off.
  4. Dredge the battered zucchini in panko crumbs, pressing to adhere.
  5. Fry the zucchini in a frying pan over medium heat until golden brown and crispy, about 1-3 minutes on each side.
  6. Prepare the dipping sauce by mixing mayonnaise, ketchup, rice vinegar, sweet relish, and sugar in a separate bowl.
