Ingredients

  • 2 cups of long-grain rice (basmati or jasmine)
  • 1 pound of chicken breasts, cubed
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn
  • 2 cups of chicken broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Cook the diced chicken, seasoning with salt and pepper, for 5-7 minutes until golden brown.
  3. Sauté the onions, garlic, and bell peppers until softened, about 3-4 minutes.
  4. Combine the rice, chicken broth, black beans, corn, paprika, cumin, and additional salt and pepper.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 20-25 minutes.
  6. Fluff the rice gently with a fork and serve immediately.
