- 2 cups of long-grain rice (basmati or jasmine)
- 1 pound of chicken breasts, cubed
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can of black beans, drained and rinsed
- 1 cup of corn
- 2 cups of chicken broth
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
- 1 teaspoon of cumin
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Cook the diced chicken, seasoning with salt and pepper, for 5-7 minutes until golden brown.
- Sauté the onions, garlic, and bell peppers until softened, about 3-4 minutes.
- Combine the rice, chicken broth, black beans, corn, paprika, cumin, and additional salt and pepper.
- Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 20-25 minutes.
- Fluff the rice gently with a fork and serve immediately.
