- 6 hard-boiled eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- Salt and pepper to taste
- Paprika for garnish
- Chives or parsley for garnish (optional)
Instructions
- Cut the hard-boiled eggs in half lengthwise.
- Remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork, then mix in the mayonnaise, Dijon mustard, white vinegar, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika and garnish with chives or parsley if desired.
- Refrigerate until ready to serve; best after chilling for at least 30 minutes.
Notes
Customize with sriracha for heat or sweet pickle relish for sweetness. Can be made a day in advance.
