  • 1/2 cup Buttermilk (or Dairy-free milk with lemon juice)
  • 1 cup Peaches (fresh or canned, drained)
  • 8 oz Cream Cheese (or vegan cream cheese)
  • 1/4 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 2 slices Fresh Peach Slices
  • 1 tbsp Extra Honey (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine flour, baking powder, baking soda, and salt in a mixing bowl; set aside.
  3. Cream the butter, honey, and granulated sugar until fluffy.
  4. Add eggs one at a time, mixing in vanilla extract with the second egg.
  5. Gradually add the flour mixture while alternating with buttermilk.
  6. Fold in peaches gently.
  7. Portion batter into cupcake liners, filling each 2/3 full.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Transfer to a cooling rack and let cool.
  10. Beat cream cheese, powdered sugar, and vanilla until smooth.
  11. Frost cooled cupcakes, garnish with peach slices and a drizzle of honey.

Notes

For best results, allow cupcakes to cool completely before frosting to avoid melting.
