- 1 cup Peaches (fresh or canned, drained)
- 8 oz Cream Cheese (or vegan cream cheese)
- 1/4 cup Powdered Sugar
- 1 tsp Vanilla Extract
- 2 slices Fresh Peach Slices
- 1 tbsp Extra Honey (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine flour, baking powder, baking soda, and salt in a mixing bowl; set aside.
- Cream the butter, honey, and granulated sugar until fluffy.
- Add eggs one at a time, mixing in vanilla extract with the second egg.
- Gradually add the flour mixture while alternating with buttermilk.
- Fold in peaches gently.
- Portion batter into cupcake liners, filling each 2/3 full.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Transfer to a cooling rack and let cool.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Frost cooled cupcakes, garnish with peach slices and a drizzle of honey.
Notes
For best results, allow cupcakes to cool completely before frosting to avoid melting.
