Description

A succulent pork tenderloin bathed in a rich, creamy sauce with sun-dried tomatoes and garlic, perfect for any romantic dinner or family gathering.


Ingredients

  • 1 lb Pork Tenderloin
  • Salt and Pepper to taste
  • 2 tbsp Butter
  • 2 tbsp Olive Oil
  • 1 tbsp Garlic Powder
  • 2 tbsp Flour
  • 4 cloves Garlic, minced
  • 1/2 cup Dry White Wine or Chicken Broth
  • 1 cup Heavy/Whipping Cream
  • 1 tbsp Tomato Paste
  • 1/3 cup Sun-Dried Tomatoes
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/3 cup Freshly Grated Parmesan Cheese
  • 1 handful Fresh Basil, chopped

Instructions

  1. Pat the pork tenderloin dry and season with salt and pepper.
  2. Melt butter and olive oil in a skillet over medium-high heat and sear the pork for 3-4 minutes on each side.
  3. Remove pork and set aside; sauté minced garlic in the skillet until fragrant.
  4. Whisk in flour and cook for 1 minute.
  5. Gradually add wine or broth while whisking, then stir in cream, tomato paste, sun-dried tomatoes, oregano, and red pepper flakes.
  6. Return pork to skillet, cover with sauce and cook for another 10-12 minutes until internal temperature reaches 145°F (63°C).
  7. Sprinkle with Parmesan and fresh basil before serving.
  8. Let rest before slicing and drizzling with sauce.

Notes

Make the creamy sauce ahead of time and reheat before adding cooked pork. Use a meat thermometer for perfect doneness.
