- 1 lb Pork Tenderloin
- Salt and Pepper to taste
- 2 tbsp Butter
- 2 tbsp Olive Oil
- 1 tbsp Garlic Powder
- 2 tbsp Flour
- 4 cloves Garlic, minced
- 1/2 cup Dry White Wine or Chicken Broth
- 1 cup Heavy/Whipping Cream
- 1 tbsp Tomato Paste
- 1/3 cup Sun-Dried Tomatoes
- 1/2 tsp Dried Oregano
- 1/4 tsp Crushed Red Pepper Flakes
- 1/3 cup Freshly Grated Parmesan Cheese
- 1 handful Fresh Basil, chopped
Instructions
- Pat the pork tenderloin dry and season with salt and pepper.
- Melt butter and olive oil in a skillet over medium-high heat and sear the pork for 3-4 minutes on each side.
- Remove pork and set aside; sauté minced garlic in the skillet until fragrant.
- Whisk in flour and cook for 1 minute.
- Gradually add wine or broth while whisking, then stir in cream, tomato paste, sun-dried tomatoes, oregano, and red pepper flakes.
- Return pork to skillet, cover with sauce and cook for another 10-12 minutes until internal temperature reaches 145°F (63°C).
- Sprinkle with Parmesan and fresh basil before serving.
- Let rest before slicing and drizzling with sauce.
Notes
Make the creamy sauce ahead of time and reheat before adding cooked pork. Use a meat thermometer for perfect doneness.
