Crockpot Pierogi Casserole with Kielbasa

Description

A comforting Crockpot casserole featuring layers of tender pierogies, smoky kielbasa, and creamy cheddar cheese, all cooked to perfection.


Ingredients

Scale
  • 1 package frozen pierogies (about 16 oz)
  • 1 lb kielbasa, sliced
  • 2 cups shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cups sauerkraut (optional)
  • 1 cup sour cream
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. In your slow cooker, lay down half of the frozen pierogies across the bottom.
  2. Sprinkle half of the sliced kielbasa over the pierogies, followed by half of the chopped onion. If using sauerkraut, add it now.
  3. Sprinkle half of the cheddar cheese on top.
  4. Repeat with the remaining pierogies, kielbasa, onion, and sauerkraut, then finish with a final layer of cheese.
  5. Pour the chicken broth over the top, season with salt and pepper.
  6. Cover and cook on low for about 4 to 6 hours.
  7. Once ready, stir in the sour cream and garnish with chives or parsley.

Notes

For make-ahead, prep layers the night before and store in the refrigerator. You can also bake it in the oven if short on time.
