Ingredients
Scale
- 2.5–3 lbs Russet or Yukon Gold Potatoes
- 1/2 cup (120ml) Freshly Squeezed Lemon Juice
- 1/2 cup (120ml) Good Quality Extra Virgin Olive Oil
- 4–6 cloves Garlic, minced
- 2 tablespoons Dried Oregano
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 cup (120ml) Vegetable or Chicken Broth
- Fresh Parsley or Oregano, for garnish (optional)
Instructions
- Prep the Potatoes: Wash and scrub your potatoes well to rid them of any dirt. If preferred, peel them. Chop them into uniform 1-1.5 inch wedges or 1-inch chunks to ensure even cooking.
- Soak for Crunch: Soak the cut potatoes in a bowl of cold water for 30-60 minutes. This crucial step extracts excess starch for that perfect crunch later. Drain and pat dry thoroughly with clean towels.
- Preheat the Oven: Set your oven to 400°F (200°C), positioning a rack in the middle.
- Make the Marinade: In a very large bowl, whisk together the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper.
- Coat the Potatoes: Toss the thoroughly dried potato pieces into the marinade, ensuring every wedge receives full flavor coverage.
- Roast Them Right: Spread the marinated potatoes in a single layer on a large baking sheet or roasting pan. Avoid overcrowding.
- Initial Roasting: Place them in the oven and roast for an initial 20-25 minutes.
- Flip & Add Broth: Carefully remove the pan, flip each potato with a spatula, and pour the broth into the pan around the potatoes.
- Final Roasting: Return to the oven. Continue roasting for another 25-35 minutes, flipping every 10-15 minutes.
- Finish with Perfection: Aim for an overall roasting time of approximately 50-60 minutes, until fork-tender and golden-brown. For an extra crisp, increase the oven temperature to 425°F (220°C) for the final 10-15 minutes.
- Rest Before Serving: Allow the potatoes to rest for about 5-10 minutes before garnishing with fresh parsley or oregano if desired.
Notes
For make-ahead, soak potatoes the day before. Use vegetable broth for a vegan option. Ensure potatoes are thoroughly dried before roasting for maximum crispiness.
