Ingredients

- 10 sheets of phyllo pastry
- 8 ounces of feta cheese, crumbled
- 1/4 cup of ricotta cheese
- 1/4 cup of chopped fresh herbs (such as parsley or dill)
- 1/4 cup of olive oil
- 1/4 cup of honey
- 1 tablespoon of chili flakes
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the crumbled feta, ricotta, fresh herbs, salt, and pepper until well combined.
- Lay one sheet of phyllo pastry on a clean surface and brush it lightly with olive oil.
- Layer another sheet on top and brush it with oil again.
- Place a tablespoon of the cheese mixture on one edge of the phyllo and roll it tightly to form a log.
- Repeat the process with the remaining phyllo and filling, ensuring each roll is well-formed.
- Transfer the rolls to a baking sheet lined with parchment paper.
- Brush the tops of the rolls with more olive oil.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Mix honey and chili flakes in a small saucepan over low heat until warmed, for drizzling.
- Drizzle the chili honey over the baked rolls before serving.
Notes
Make-ahead by assembling rolls a few hours in advance. For a quicker method, use an air fryer at 375°F for 10-15 minutes.
