  • 2 large boneless, skinless chicken breasts (1 to 1.5 pounds / 450680 g)
  • 1 cup (120 g) all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 teaspoon salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup (about 2 lemons) fresh lemon juice
  • 1/2 cup (120 ml) low sodium chicken broth
  • 2 tablespoons capers, drained and rinsed
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pound the chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper and gently pound to about 1/2-inch (1.3 cm) thickness. (5 minutes)
  2. Season the flour: In a shallow bowl, mix the flour with 1 teaspoon salt and 1/2 teaspoon pepper. (2 minutes)
  3. Prepare the eggs: Beat the eggs until smooth. (2 minutes)
  4. Coat the chicken: Dredge each chicken breast lightly in the seasoned flour, dip into the beaten eggs, and then dredge again in flour. Set aside for a few minutes. (5 minutes)
  5. Heat the skillet: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat until the butter melts. (2 minutes)
  6. Cook the chicken: Place the coated chicken breasts in the hot skillet and cook for 3-4 minutes on each side until golden brown. (8-10 minutes)
  7. Make the sauce: Add the remaining tablespoon of butter and minced garlic to the skillet, sauté until fragrant, then stir in chicken broth, lemon juice, and capers. Simmer until reduced. (5 minutes)
  8. Reintroduce the chicken: Return chicken to the pan, spoon sauce over it, and warm through for 2 minutes. (2 minutes)
  9. Serve: Plate the chicken, spoon extra sauce on top, and sprinkle with fresh parsley. Enjoy!
