- 2 large boneless, skinless chicken breasts (1 to 1.5 pounds / 450–680 g)
- 1 cup (120 g) all-purpose flour
- 2 large eggs, lightly beaten
- 1 teaspoon salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 3 tablespoons extra virgin olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup (about 2 lemons) fresh lemon juice
- 1/2 cup (120 ml) low sodium chicken broth
- 2 tablespoons capers, drained and rinsed
- Fresh parsley, chopped, for garnish
Instructions
- Pound the chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper and gently pound to about 1/2-inch (1.3 cm) thickness. (5 minutes)
- Season the flour: In a shallow bowl, mix the flour with 1 teaspoon salt and 1/2 teaspoon pepper. (2 minutes)
- Prepare the eggs: Beat the eggs until smooth. (2 minutes)
- Coat the chicken: Dredge each chicken breast lightly in the seasoned flour, dip into the beaten eggs, and then dredge again in flour. Set aside for a few minutes. (5 minutes)
- Heat the skillet: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat until the butter melts. (2 minutes)
- Cook the chicken: Place the coated chicken breasts in the hot skillet and cook for 3-4 minutes on each side until golden brown. (8-10 minutes)
- Make the sauce: Add the remaining tablespoon of butter and minced garlic to the skillet, sauté until fragrant, then stir in chicken broth, lemon juice, and capers. Simmer until reduced. (5 minutes)
- Reintroduce the chicken: Return chicken to the pan, spoon sauce over it, and warm through for 2 minutes. (2 minutes)
- Serve: Plate the chicken, spoon extra sauce on top, and sprinkle with fresh parsley. Enjoy!
