Ingredients

  • 200 grams Spaghetti or fettuccine
  • 1 teaspoon Salt
  • 1 cup Heavy Cream
  • 2 Large Eggs
  • 50 grams Freshly grated Parmesan Cheese
  • 100 grams Smoked Salmon
  • 2 cups Fresh Spinach
  • 1 teaspoon Black Pepper
  • 2 tablespoons Fresh Herbs (Dill or parsley)

Instructions

  1. Cook the pasta by boiling salted water and adding your pasta. Cook until al dente, about 8–10 minutes. Reserve 1 cup of pasta water, then drain and set aside.
  2. Prepare the sauce by whisking together heavy cream, eggs, and grated Parmesan cheese in a mixing bowl until smooth. Season with salt and black pepper.
  3. Combine ingredients in a skillet over medium heat, adding a splash of olive oil and tossing in spinach until wilted.
  4. Add smoked salmon to the skillet and warm through.
  5. Mix everything together by adding the drained pasta to the skillet, removing from heat, and pouring the cream mixture over the pasta. Toss gently to coat.
  6. Adjust the consistency by folding in reserved pasta water until you achieve the desired creaminess.
  7. Serve the carbonara garnished with fresh herbs, black pepper, and extra Parmesan.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently to preserve creaminess. Customize with lemon juice or seasonal vegetables as desired.
