- 200 grams Spaghetti or fettuccine
- 1 teaspoon Salt
- 1 cup Heavy Cream
- 2 Large Eggs
- 50 grams Freshly grated Parmesan Cheese
- 100 grams Smoked Salmon
- 2 cups Fresh Spinach
- 1 teaspoon Black Pepper
- 2 tablespoons Fresh Herbs (Dill or parsley)
Instructions
- Cook the pasta by boiling salted water and adding your pasta. Cook until al dente, about 8–10 minutes. Reserve 1 cup of pasta water, then drain and set aside.
- Prepare the sauce by whisking together heavy cream, eggs, and grated Parmesan cheese in a mixing bowl until smooth. Season with salt and black pepper.
- Combine ingredients in a skillet over medium heat, adding a splash of olive oil and tossing in spinach until wilted.
- Add smoked salmon to the skillet and warm through.
- Mix everything together by adding the drained pasta to the skillet, removing from heat, and pouring the cream mixture over the pasta. Toss gently to coat.
- Adjust the consistency by folding in reserved pasta water until you achieve the desired creaminess.
- Serve the carbonara garnished with fresh herbs, black pepper, and extra Parmesan.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently to preserve creaminess. Customize with lemon juice or seasonal vegetables as desired.
