Ingredients

- 1 package of puff pastry sheets
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, diced
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, sauté garlic and mushrooms until soft.
- Add chopped spinach and cook until wilted.
- Remove from heat and mix in cream cheese and Parmesan cheese. Season with salt and pepper.
- Roll out the puff pastry and cut into squares.
- Place a spoonful of the mushroom and spinach mixture in the center of each square.
- Fold the pastry over to create a triangle and seal the edges.
- Brush the tops with beaten egg.
- Bake for 15-20 minutes or until golden brown.
Notes
- For a vegan option, substitute cream cheese with a plant-based alternative.
- These bites can be made ahead of time and frozen before baking.
