Description

Ingredients

  • 2 tablespoons butter
  • 1 pound chicken strips (or chicken thighs/breasts)
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • ½ cup chicken stock
  • ½ cup grated parmesan cheese (or pecorino)
  • ½ cup pepperoncini peppers (or banana peppers)
  • ½ cup roasted red peppers (or fresh red bell peppers)
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large skillet over medium heat until bubbling gently.
  2. Add chicken strips, season lightly with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through.
  3. Remove chicken from skillet and cover to keep warm.
  4. Add garlic to the skillet and sauté until fragrant, about 30 seconds.
  5. Pour in heavy cream and chicken stock, stirring to combine; let simmer for 5 minutes.
  6. Stir in parmesan cheese until melted and sauce is smooth.
  7. Return chicken to skillet, add pepperoncini and roasted red peppers, and simmer for another 2-3 minutes.
  8. Serve hot, pouring extra sauce over the top.

Notes

Make ahead by preparing the sauce and chicken in advance, storing them separately. For a different take, use an air fryer for the chicken.
