- 1 pound chicken strips (or chicken thighs/breasts)
- 4 cloves garlic, minced
- 1 cup heavy cream (or coconut milk for dairy-free)
- ½ cup chicken stock
- ½ cup grated parmesan cheese (or pecorino)
- ½ cup pepperoncini peppers (or banana peppers)
- ½ cup roasted red peppers (or fresh red bell peppers)
- Salt and pepper to taste
Instructions
- Melt butter in a large skillet over medium heat until bubbling gently.
- Add chicken strips, season lightly with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through.
- Remove chicken from skillet and cover to keep warm.
- Add garlic to the skillet and sauté until fragrant, about 30 seconds.
- Pour in heavy cream and chicken stock, stirring to combine; let simmer for 5 minutes.
- Stir in parmesan cheese until melted and sauce is smooth.
- Return chicken to skillet, add pepperoncini and roasted red peppers, and simmer for another 2-3 minutes.
- Serve hot, pouring extra sauce over the top.
Notes
Make ahead by preparing the sauce and chicken in advance, storing them separately. For a different take, use an air fryer for the chicken.
