- 1 head of cabbage, roasted and chopped
- 4 slices of bacon, chopped
- 1 cup of grated Parmesan cheese
- 2 large eggs
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the cabbage into quarters and drizzle with olive oil, massaging it into the cabbage. Roast for 25-30 minutes until tender and charred.
- In a skillet, cook the bacon over medium heat until crispy. Remove bacon and leave rendered fat in the skillet.
- In a bowl, whisk together the eggs and Parmesan until creamy.
- In the same skillet, sauté garlic until fragrant.
- Add roasted cabbage and bacon to the skillet and combine well.
- Remove from heat and stir in the egg mixture, ensuring the heat gently cooks the eggs.
- Season with salt and pepper to taste and serve immediately.
Notes
For make-ahead options, roast cabbage and cook bacon in advance. Use an air fryer for faster roasting. Customize with greens like spinach or kale.
