Description

A comforting dish that elevates humble cabbage into a creamy, flavorful carbonara, complete with crispy bacon and rich Parmesan.


Ingredients

  • 1 head of cabbage, roasted and chopped
  • 4 slices of bacon, chopped
  • 1 cup of grated Parmesan cheese
  • 2 large eggs
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the cabbage into quarters and drizzle with olive oil, massaging it into the cabbage. Roast for 25-30 minutes until tender and charred.
  3. In a skillet, cook the bacon over medium heat until crispy. Remove bacon and leave rendered fat in the skillet.
  4. In a bowl, whisk together the eggs and Parmesan until creamy.
  5. In the same skillet, sauté garlic until fragrant.
  6. Add roasted cabbage and bacon to the skillet and combine well.
  7. Remove from heat and stir in the egg mixture, ensuring the heat gently cooks the eggs.
  8. Season with salt and pepper to taste and serve immediately.

Notes

For make-ahead options, roast cabbage and cook bacon in advance. Use an air fryer for faster roasting. Customize with greens like spinach or kale.
