  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the black beans, corn, diced tomatoes, taco seasoning, and cooked rice to the skillet. Stir to combine.
  4. Remove from heat and mix in the sour cream and half of the shredded cheese.
  5. Transfer the mixture to a greased casserole dish and top with the remaining cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped green onions before serving.
