- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup cooked rice
- 1 cup shredded cheese
- 1 packet taco seasoning
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the black beans, corn, diced tomatoes, taco seasoning, and cooked rice to the skillet. Stir to combine.
- Remove from heat and mix in the sour cream and half of the shredded cheese.
- Transfer the mixture to a greased casserole dish and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
