- 1 cup Jasmine Rice
- 1 can (13.5 oz) Coconut Milk
- 2 cups Vegetables (bell peppers, carrots, snap peas)
- 2 tablespoons Soy Sauce
- 1 tablespoon Garlic, minced
- Juice of 1 Lime
- Salt to taste
- Oil for cooking
- Fresh herbs (cilantro, basil, or mint)

Instructions
- Prepare the rice: Rinse the jasmine rice under cold water until clear. Combine in a pot with coconut milk and a pinch of salt. Bring to a boil, reduce to low, cover, and simmer for 15 minutes.
- Marinate the chicken: Slice chicken thighs and mix with soy sauce, minced garlic, and lime juice. Let marinate for at least 10 minutes.
- Cook the chicken: Heat a grill pan over medium-high heat, add oil, and cook the marinated chicken for 6-8 minutes until golden and cooked through.
- Sauté the veggies: In the same pan, toss in the chopped vegetables and stir-fry for 2-3 minutes until tender yet crisp.
- Assemble the bowl: Fluff the coconut rice and divide among bowls. Top with grilled chicken, sautéed vegetables, fresh herbs, and lime wedges.
