Ingredients

For the Brown Sugar Cinnamon Syrup:

  • ½ cup (100g) Light Brown Sugar, packed

  • ½ cup (120ml) Water

  • 2 Cinnamon Sticks (or 1 teaspoon ground cinnamon)

  • 1 teaspoon Vanilla Extract

  • A pinch of Salt

For the Cinnamon Roll Cream (Cold Foam):

  • ¼ cup (60ml) Heavy Cream (or heavy whipping cream)

  • ¼ cup (60ml) Whole Milk (for a lighter foam; you can use all cream for a richer result)

  • 2 tablespoons Brown Sugar Cinnamon Syrup (from above)

  • 1 tablespoon Plain Cream Cheese, softened

  • ¼ teaspoon Vanilla Extract

For the Assembly:

  • 1 cup (240ml) Cold Brew Coffee Concentrate (or strongly brewed coffee, chilled)

  • Ice Cubes

For Garnish:

  • A drizzle of the Brown Sugar Cinnamon Syrup

  • A sprinkle of Ground Cinnamon or Cinnamon Sugar


Instructions

Step 1: Craft the Brown Sugar Cinnamon Syrup
In a small saucepan, combine the brown sugar, water, and cinnamon sticks (or ground cinnamon). Heat over medium heat, stirring frequently, until the sugar has completely dissolved. Bring the mixture to a gentle simmer and let it cook for 5-7 minutes to infuse the flavors and thicken slightly. Remove from heat and stir in the vanilla extract and pinch of salt. Allow the syrup to cool completely. For a smoother syrup, strain out the cinnamon sticks. This can be made days in advance and stored in the fridge.

Step 2: Prepare the Cinnamon Roll Cream Cold Foam
This is the star of the show. Ensure your cream cheese is very soft. In a bowl or large measuring cup, combine the heavy cream, whole milk, 2 tablespoons of the cooled syrup, the softened cream cheese, and the vanilla extract. Using a milk frother, immersion blender, or a whisk, blend the mixture until it becomes thick, frothy, and holds soft peaks. The goal is a pourable, creamy foam, not stiff whipped cream. The cream cheese adds a tangy depth and helps stabilize the foam.

Step 3: Assemble the Drink
Fill a tall glass to the brim with ice cubes. Pour the cold brew coffee concentrate over the ice.

Step 4: Sweeten the Base (Optional)
If you prefer a sweeter coffee base, you can stir 1-2 tablespoons of the brown sugar cinnamon syrup directly into the cold brew at this point. For a purer layered experience, leave the coffee unsweetened.

Step 5: Top with the Cinnamon Roll Cream
Slowly and gently pour the prepared cinnamon roll cream cold foam over the top of the coffee. The foam should float beautifully on the surface, creating a distinct layer. For the best effect, pour it over the back of a spoon.

Step 6: The Final Garnish
Drizzle a little extra brown sugar cinnamon syrup over the top of the foam for a visual cue to the flavor within. Finish with a light dusting of ground cinnamon or cinnamon sugar.

Step 7: Serve and Enjoy
