Ingredients
For the Cinnamon Brown Sugar Syrup:

1 cup (200g) light or dark brown sugar, packed

1 cup (240ml) water

2–3 cinnamon sticks (or 1 heaping teaspoon of ground cinnamon)

1 teaspoon pure vanilla extract

A pinch of fine sea salt (to enhance all the flavors)
For the Shaken Espresso Base (per drink):

2–3 shots of fresh espresso (about 2–3 oz or 60-90ml total) or ½ cup of strongly brewed coffee, cooled

2–3 tablespoons of the prepared Cinnamon Brown Sugar Syrup (adjust to taste)

A generous scoop of ice cubes (for the shaking tin)
For Assembly (per drink):

¼ cup (60ml) of your preferred milk, oat milk, almond milk, or cream (optional)

Instructions
Step 1: Craft the Signature Syrup
In a small saucepan, combine the packed brown sugar, water, and cinnamon sticks (or ground cinnamon). Heat over medium heat, stirring frequently, until the sugar has completely dissolved. Once it begins to simmer, reduce the heat to low and let it simmer gently for 8-10 minutes to allow the cinnamon to infuse and the syrup to thicken slightly. Remove from the heat and stir in the vanilla extract and pinch of salt. Let it cool completely before using. This syrup can be stored in a sealed jar in the refrigerator for up to 3 weeks.
Step 2: Pull the Perfect Espresso Shots
Brew your 2-3 shots of espresso directly into a heatproof cup or your cocktail shaker. Using fresh, high-quality beans is crucial here, as the espresso is the star of the show. The shots should be pulled right before you plan to shake the drink for the best flavor and crema. If using strongly brewed coffee, ensure it is at least at room temperature or cooler.
Step 3: The Transformative Shake
Take a cocktail shaker or any tightly sealable jar (a mason jar works perfectly). Add the freshly brewed, hot espresso, 2-3 tablespoons of the cinnamon brown sugar syrup, and a generous scoop of ice to the shaker. Secure the lid very tightly. Shake vigorously for 12-15 seconds. You will hear the sound change as the ice breaks down and the mixture becomes frothy and chilled. This step is non-negotiable for creating the characteristic foam and perfectly integrated flavor.
Step 4: Prepare the Serving Glass
Take a tall serving glass and fill it to the brim with fresh, clean ice cubes. If you are using milk, now is the time to pour your ¼ cup of cold milk over the ice in the serving glass. Leaving the milk out will create a beautiful layered effect.
Step 5: Strain and Pour
Remove the lid from your shaker and strain the contents into your prepared serving glass. Use the strainer to hold back the ice from the shaker, allowing only the chilled, frothy espresso to pour over the new ice (and milk, if using). The gorgeous, foamy layer will naturally rise to the top.
Step 6: The Final Garnish
If desired, give the top of the foam a light dusting of ground cinnamon for aroma and visual appeal. You can also add a cinnamon stick as a natural stirrer.
Step 7: Enjoy Immediately
