- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon adobo sauce (from canned chipotle peppers)
- 1 chipotle pepper (finely minced)
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups fresh pineapple (diced)
- 1/4 cup red onion (finely chopped)
- 1/2 jalapeño (seeded and minced)
- 2 tablespoons fresh cilantro (chopped)
- Juice of 1 lime
- Pinch of salt
- 8 small corn or flour tortillas
- 1/2 cup shredded cabbage or lettuce (optional)
- Lime wedges and extra cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C) or, if grilling, preheat your grill to medium-high heat.
- Prepare the salmon marinade by whisking together olive oil, honey, adobo sauce, minced chipotle pepper, garlic powder, smoked paprika, salt, and black pepper.
- Marinate the salmon fillets on a lined baking sheet, brushing the marinade generously and letting it sit for 15-20 minutes.
- Roast the salmon in the oven for 12-15 minutes or grill for 10-12 minutes until it flakes easily with a fork.
- Make the pineapple salsa by mixing diced pineapple, red onion, jalapeño, cilantro, lime juice, and salt in a bowl, allowing it to rest in the fridge.
- Assemble the tacos by flaking the cooked salmon into chunks, placing it onto warmed tortillas, topping with pineapple salsa, and adding cabbage or lettuce if desired.
- Serve with lime wedges and extra cilantro on the side.
