  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon adobo sauce (from canned chipotle peppers)
  • 1 chipotle pepper (finely minced)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups fresh pineapple (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/2 jalapeño (seeded and minced)
  • 2 tablespoons fresh cilantro (chopped)
  • Juice of 1 lime
  • Pinch of salt
  • 8 small corn or flour tortillas
  • 1/2 cup shredded cabbage or lettuce (optional)
  • Lime wedges and extra cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) or, if grilling, preheat your grill to medium-high heat.
  2. Prepare the salmon marinade by whisking together olive oil, honey, adobo sauce, minced chipotle pepper, garlic powder, smoked paprika, salt, and black pepper.
  3. Marinate the salmon fillets on a lined baking sheet, brushing the marinade generously and letting it sit for 15-20 minutes.
  4. Roast the salmon in the oven for 12-15 minutes or grill for 10-12 minutes until it flakes easily with a fork.
  5. Make the pineapple salsa by mixing diced pineapple, red onion, jalapeño, cilantro, lime juice, and salt in a bowl, allowing it to rest in the fridge.
  6. Assemble the tacos by flaking the cooked salmon into chunks, placing it onto warmed tortillas, topping with pineapple salsa, and adding cabbage or lettuce if desired.
  7. Serve with lime wedges and extra cilantro on the side.

Notes

Prepare the salsa a day ahead to deepen flavors, adding cilantro just before serving to keep it fresh.
