- 1 pound skinless boneless chicken breasts or thighs (500 g)
- ¼ cup cornstarch
- ¼ cup all-purpose flour
- 1 teaspoon ginger garlic paste
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- Any neutral flavored oil (for frying)
- 3 tablespoons cooking oil
- 2 tablespoons chopped garlic
- 2–3 green chilies (chopped)
- 1 large onion (cut into 1-inch cubes)
- 1 cup cubed bell peppers (1-inch cubes)
- 2 tablespoons dark soy sauce
- 4 tablespoons sweet chili sauce
- 2 tablespoons red chili paste
- 2 tablespoons tomato ketchup
- 1 tablespoon rice vinegar
- 1 cup peeled and cubed ripe mangoes
- Chopped spring onion greens (to garnish)
Instructions
- Prepare the chicken: Start by cutting your chicken into bite-sized pieces. In a bowl, combine the cornstarch, flour, ginger garlic paste, salt, and black pepper. Toss the chicken pieces in this mixture until they are well coated.
- Heat the oil: In your pan or wok, heat a generous amount of neutral oil over medium-high heat. Once hot, gently place the chicken in the pan, ensuring they don’t overcrowd. Fry for about 5-7 minutes until they reach a golden brown, flipping halfway through.
- Set aside the chicken and drain on paper towels. In the same hot oil, add chopped garlic and green chilies. Sauté for a minute until fragrant.
- Add the cubed onion and bell peppers. Stir-fry for about 3-4 minutes until they soften slightly but still retain some crunch.
- Create the sauce: In a bowl, mix dark soy sauce, sweet chili sauce, red chili paste, tomato ketchup, rice vinegar, water, and additional cornstarch. Pour this into the pan and cook for another minute or two until the sauce thickens.
- Return the fried chicken to the pan, tossing to coat each piece in the sauce. Gently fold in the mango cubes to warm through.
- Transfer the stir-fry to a serving dish and garnish with chopped spring onions.
Notes
For a healthier version, use an air fryer for the chicken. Try adding cashews or peanuts for extra crunch.
