Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by placing it between two sheets of plastic wrap and pounding it to an even thickness of about 1/2 inch.
  3. Make the filling by combining spinach, ricotta, Parmesan, sun-dried tomatoes, garlic powder, salt, and pepper in a mixing bowl.
  4. Assemble the roulades by spreading the filling over each chicken breast and rolling them tightly from one end to another.
  5. Sear the roulades in a heated skillet with olive oil for about 3-4 minutes on all sides.
  6. Bake the roulades in the oven for 25-30 minutes, until they reach an internal temperature of 165°F (75°C).
  7. Rest the roulades for a few minutes before slicing and serving.

Notes

Prepare the filling a day in advance and assemble the roulades several hours prior to cooking. Avoid over-pounding the chicken to keep it tender.
