Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the chicken by placing it between two sheets of plastic wrap and pounding it to an even thickness of about 1/2 inch.
- Make the filling by combining spinach, ricotta, Parmesan, sun-dried tomatoes, garlic powder, salt, and pepper in a mixing bowl.
- Assemble the roulades by spreading the filling over each chicken breast and rolling them tightly from one end to another.
