Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 ounces pasta (spaghetti or fettuccine)
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, rinsed and drained
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to boil and cook the pasta according to package instructions. Drain and set aside, tossing a small amount of olive oil to prevent sticking.
  2. Prepare the chicken: Season the chicken breasts generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the chicken: Place the chicken in the skillet, cooking for about 6–7 minutes on each side, until cooked through. Remove from skillet and let rest.
  4. Sauté aromatics: In the same skillet, reduce the heat slightly and add the minced garlic. Sauté for about 1 minute until fragrant.
  5. Create the sauce: Pour in the chicken broth and lemon juice, adding capers thereafter. Bring to a simmer.
  6. Combine everything: Slice the rested chicken into thin strips, add it back to the skillet, along with cooked pasta and butter, tossing to coat.
  7. Serve: Garnish with freshly chopped parsley and enjoy hot.

Notes

Add spinach or cherry tomatoes for extra color and nutrition. You can also air fry the chicken for a healthier alternative.
