- 2 boneless, skinless chicken breasts
- 8 ounces pasta (spaghetti or fettuccine)
- 3 tablespoons olive oil
- 3 tablespoons butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers, rinsed and drained
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta: Bring a large pot of salted water to boil and cook the pasta according to package instructions. Drain and set aside, tossing a small amount of olive oil to prevent sticking.
- Prepare the chicken: Season the chicken breasts generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Sear the chicken: Place the chicken in the skillet, cooking for about 6–7 minutes on each side, until cooked through. Remove from skillet and let rest.
- Sauté aromatics: In the same skillet, reduce the heat slightly and add the minced garlic. Sauté for about 1 minute until fragrant.
- Create the sauce: Pour in the chicken broth and lemon juice, adding capers thereafter. Bring to a simmer.
- Combine everything: Slice the rested chicken into thin strips, add it back to the skillet, along with cooked pasta and butter, tossing to coat.
- Serve: Garnish with freshly chopped parsley and enjoy hot.
Notes
Add spinach or cherry tomatoes for extra color and nutrition. You can also air fry the chicken for a healthier alternative.
