- 2 tablespoons olive oil
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste

Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the chicken breasts until golden brown on both sides, about 4–5 minutes per side; then remove and set aside.
- Sauté the minced garlic for 30 seconds until fragrant.
- Add the fresh spinach and stir until wilted.
- Create the creamy sauce by stirring in the heavy cream and Parmesan cheese until melted.
- Combine the chicken with the sauce and simmer for 5–7 minutes until cooked through.
- Serve over cooked pasta if desired and enjoy!
Notes
This dish can be made ahead; just reheat the sauce before adding chicken. Feel free to customize with sun-dried tomatoes or mushrooms.
