- 1 lb chicken breast, cooked and shredded
- 1 cup mixed greens
- 1/2 cup carrots, shredded
- 1/2 cup cucumber, diced
- 1/4 cup peanuts, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon garlic, minced
Instructions
- In a large bowl, combine the cooked rice, shredded chicken, mixed greens, carrots, cucumber, peanuts, and cilantro.
- In a separate bowl, whisk together the peanut butter, soy sauce, honey, lime juice, and minced garlic until smooth.
- Pour the peanut dressing over the salad and toss to combine.
- Serve immediately, garnished with additional peanuts and cilantro if desired.
Notes
- For extra crunch, you can add crispy fried onions on top.
- This salad can be made ahead of time; just keep the dressing separate until serving.
