  • 1/2 cup milk
  • 1/4 cup butter (melted)
  • 1 teaspoon parsley (dried)
  • Salt and pepper to taste

Instructions

  1. Heat the chicken broth over medium heat in a large pot. Add the chicken, carrots, celery, and onion. Stir well, cover, and simmer for 10-15 minutes.
  2. Prepare the dumplings by combining the flour, baking powder, and salt in a mixing bowl. Stir in the milk and melted butter until just combined, being careful not to overmix.
  3. Drop spoonfuls of the dumpling mixture into the simmering soup, ensuring space between them to allow for rising. Cover the pot and let them steam for 15-20 minutes or until fluffy.
  4. Taste the soup and adjust seasoning with parsley, salt, and pepper. Serve hot.

Notes

You can use rotisserie chicken for convenience. Allow leftovers to cool completely and store in an airtight container in the fridge for up to 3 days.
