- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 package (8 oz) corn muffin mix
- 1/2 cup milk
- 1 egg
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the black beans, kidney beans, diced tomatoes, and corn to the skillet, stirring to combine.
- In a separate bowl, mix the corn muffin mix, milk, and egg until well combined.
- Spread the beef and bean mixture in a greased 9×13 inch baking dish.
- Layer the sour cream over the beef mixture, followed by the cheddar cheese.
- Pour the corn muffin batter over the top of the casserole.
- Bake in the preheated oven for 30-35 minutes, or until the corn muffin topping is golden brown.
- Let cool for a few minutes before serving.
Notes
- Feel free to add your favorite vegetables to the casserole.
- This dish can be made ahead of time and refrigerated before baking.
