Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 package (8 oz) corn muffin mix
  • 1/2 cup milk
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the black beans, kidney beans, diced tomatoes, and corn to the skillet, stirring to combine.
  4. In a separate bowl, mix the corn muffin mix, milk, and egg until well combined.
  5. Spread the beef and bean mixture in a greased 9×13 inch baking dish.
  6. Layer the sour cream over the beef mixture, followed by the cheddar cheese.
  7. Pour the corn muffin batter over the top of the casserole.
  8. Bake in the preheated oven for 30-35 minutes, or until the corn muffin topping is golden brown.
  9. Let cool for a few minutes before serving.
