Ingredients

  • 12 oz pasta (spaghetti, penne, or linguine)
  • 2 tablespoons olive oil (for sautéing)
  • 1 large yellow onion (thinly sliced)
  • 3 cloves garlic (minced)
  • Salt and pepper (to taste)
  • 3 tablespoons olive oil (for chili oil)
  • 1 tablespoon red chili flakes
  • 1 teaspoon paprika
  • 1 small garlic clove (thinly sliced)
  • 1 teaspoon soy sauce
  • Grated Parmesan cheese (to taste)
  • Fresh basil or parsley (chopped)
  • Extra chili flakes (optional)

Instructions

  1. In a skillet, heat 2 tablespoons of olive oil over medium heat and add the sliced onions. Season with salt and cook for 15-20 minutes until caramelized.
  2. In a small saucepan, combine 3 tablespoons of olive oil, sliced garlic, red chili flakes, paprika, and soy sauce over low heat, warming for about 5 minutes.
  3. Cook the pasta in salted boiling water according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  4. Add the cooked pasta to the skillet with caramelized onions and pour in the prepared chili oil, tossing to combine and adding reserved pasta water as needed for consistency.
  5. Plate the pasta and garnish with grated Parmesan and freshly chopped herbs. Serve hot.

Notes

For a vegan version, substitute Parmesan with nutritional yeast. Customize with seasonal vegetables or add grilled protein for a heartier dish.
