- 12 oz pasta (spaghetti, penne, or linguine)
- 2 tablespoons olive oil (for sautéing)
- 1 large yellow onion (thinly sliced)
- 3 cloves garlic (minced)
- Salt and pepper (to taste)
- 3 tablespoons olive oil (for chili oil)
- 1 tablespoon red chili flakes
- 1 teaspoon paprika
- 1 small garlic clove (thinly sliced)
- 1 teaspoon soy sauce
- Grated Parmesan cheese (to taste)
- Fresh basil or parsley (chopped)
- Extra chili flakes (optional)
Instructions
- In a skillet, heat 2 tablespoons of olive oil over medium heat and add the sliced onions. Season with salt and cook for 15-20 minutes until caramelized.
- In a small saucepan, combine 3 tablespoons of olive oil, sliced garlic, red chili flakes, paprika, and soy sauce over low heat, warming for about 5 minutes.
- Cook the pasta in salted boiling water according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- Add the cooked pasta to the skillet with caramelized onions and pour in the prepared chili oil, tossing to combine and adding reserved pasta water as needed for consistency.
- Plate the pasta and garnish with grated Parmesan and freshly chopped herbs. Serve hot.
Notes
For a vegan version, substitute Parmesan with nutritional yeast. Customize with seasonal vegetables or add grilled protein for a heartier dish.
