Ingredients

For the Cajun Chicken Filling:

  • 2-3 tbsp Cajun Seasoning: This is the heart of the dish. Use a high-quality blend like Tony Chachere’s or Slap Ya Mama. For a from-scratch option, mix: 2 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried oregano, ½ tsp dried thyme, ½ tsp cayenne pepper (adjust to heat preference), ½ tsp black pepper, and 1 tsp salt.

  • 2 tbsp Unsalted Butter

  • 1 small Yellow Onion, finely diced: For a savory, aromatic base.

  • 1 small Green Bell Pepper, finely diced: A classic “Holy Trinity” component that adds freshness and texture.

  • 2 cloves Garlic, minced

  • 1 tbsp Olive Oil

For the Creamy Ranch Dressing:

  • ½ cup Mayonnaise

  • ½ cup Sour Cream

  • ¼ cup Buttermilk (or ¼ cup milk with ¾ tsp white vinegar, let sit for 5 minutes)

  • 2 tbsp Fresh Chives, finely chopped

  • 1 tbsp Fresh Dill, finely chopped (or 1 tsp dried dill weed)

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder

  • ½ tsp Black Pepper

  • ¼ tsp Salt

  • 1 tbsp Fresh Lemon Juice (brightens all the flavors)

For the Slider Assembly:

  • 1 package (12 count) Hawaiian Sweet Rolls or Potato Rolls: Do not separate the rolls. Slice the entire sheet of rolls in half horizontally, keeping the top and bottom intact.

  • 8 oz Provolone Cheese, sliced: Its mild, creamy meltability is perfect. Mozzarella or a sharp white cheddar are also excellent.

  • ½ cup (1 stick) Unsalted Butter, melted

  • 1 tbsp Everything Bagel Seasoning or Poppy Seeds (optional, for the top)

  • 1 tsp Dried Parsley (for garnish)


Instructions

Step 1: Sauté the Holy Trinity Base
Preheat your oven to 350°F (175°C). In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the diced onion and green bell pepper and sauté for 5-7 minutes, until softened and the onion becomes translucent. Add the minced garlic and cook for one more minute until fragrant.

Step 2: Create the Cajun Chicken Filling
Add the shredded cooked chicken to the skillet with the vegetables. Sprinkle the 2-3 tablespoons of Cajun seasoning over everything. Start with 2 tablespoons, toss, and taste for heat before adding more. Stir everything together until the chicken is evenly coated and heated through. Remove from heat.

Step 3: Prepare the Homemade Ranch Dressing
In a medium bowl, whisk together the mayonnaise, sour cream, buttermilk, fresh chives, fresh dill, garlic powder, onion powder, black pepper, salt, and fresh lemon juice. Whisk until the dressing is smooth and all the herbs are evenly distributed.

Step 4: Combine Chicken and Ranch
Pour about ⅔ of the prepared ranch dressing into the skillet with the Cajun chicken. Reserve the remaining dressing for serving. Stir until the chicken mixture is creamy and fully incorporated.

Step 5: Assemble the Slider Bake
Take a 9×13 inch baking dish. Without separating the individual rolls, slice the entire package of Hawaiian rolls in half horizontally so you have one solid top and one solid bottom. Place the bottom half of the rolls in the baking dish. Layer half of the provolone cheese slices over the bottom bun. Spread the entire Cajun ranch chicken mixture evenly over the cheese. Top the chicken with the remaining provolone cheese slices. Carefully place the top half of the rolls over the cheese.

Step 6: The Buttery, Crispy Top
In a small bowl, mix the melted ½ cup of butter with the everything bagel seasoning (if using) and dried parsley. Using a pastry brush, generously and meticulously brush this seasoned butter mixture over the top of every roll, ensuring the edges are well-coated. This will create a golden, crispy, and flavorful crust.

Step 7: Bake to Golden-Brown Perfection
Cover the baking dish tightly with aluminum foil and bake for 15 minutes. Then, remove the foil and bake for an additional 5-10 minutes, or until the rolls are a deep golden brown and the cheese is bubbly inside.

Step 8: Slice, Serve, and Dip
Remove the slider bake from the oven and let it rest for 5 minutes. This allows the cheese to set slightly for cleaner slicing. Using a very sharp serrated knife, slice along the roll perforations to create individual sliders. Serve immediately with the reserved ranch dressing for dipping
