Ingredients
- Steak (ribeye, sirloin, or filet mignon)
- Fresh garlic
- Fresh parsley, thyme, or rosemary
- Baby potatoes
- Unsalted butter
- Olive oil
Instructions
- Prepare the Potatoes: Wash and scrub the baby potatoes clean. Cut them in half. Toss with olive oil, minced garlic, and herbs; season with salt and pepper.
- Roast the Potatoes: Spread seasoned potatoes on a baking sheet. Roast in a preheated oven at 400°F (200°C) for 20-25 minutes, turning halfway.
- Cook the Steak Bites: Cut steak into cubes, season well. Heat skillet over medium-high heat, melt butter with olive oil. Cook steak for 2-3 minutes on each side for medium-rare.
- Finish the Steak Bites: Reduce heat, add remaining butter, garlic, and herbs. Baste steak for another minute.
- Serve: Plate steak bites with roasted potatoes, drizzle with leftover garlic butter, and garnish with herbs.
Notes
Prepare potatoes in advance and store in the fridge for up to 24 hours before roasting. Customize with vegetables and different herbs.
