Description

A comforting and cheesy dish that transforms the beloved burrito into a warm family-style casserole, featuring layers of seasoned ground beef, refried beans, rice, and melted cheese.

Ingredients

  • Flour tortillas
  • Ground beef
  • Refried beans
  • Sour cream
  • Rice (white or brown)
  • Cheese (cheddar and Monterey Jack)
  • Toppings (fresh cilantro, jalapeños, guacamole, etc.)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet until browned, about 5-7 minutes.
  3. Lay a single layer of flour tortillas in a baking dish.
  4. Spread cooked ground beef over the tortillas, then add refried beans, rice, sour cream, and cheese.
  5. Repeat the layering process until all ingredients are used, finishing with cheese on top.
  6. Bake for 25-30 minutes, until cheese is bubbly and golden.
  7. Let cool for about 10 minutes before serving.

Notes

You can assemble the casserole the night before and refrigerate it. For a lighter version, substitute Greek yogurt for sour cream.
